Summer Release 2025: Andrés Trujillo, Colombia

This summer’s release comes from Andrés Trujillo in Planadas, Tolima, Colombia – grown at 1,900 MASL, and processed using a full natural method. That last detail matters. Natural processing is uncommon in Colombia due to climate challenges, but Jailer Andrés Trujillo is one of the few producers consistently working this way, and doing it well.

This lot is made up of just three Arabica varieties; Castillo, Caturra, and San Bernardo; a more focused approach compared to previous years, where broader blends were more common. It gives the coffee a cleaner profile while still retaining the complexity natural processing is known for.

Processing, Roasting, and Flavour

Natural coffees like this require careful attention at every stage – from drying conditions at origin to how we handle the roast. With this lot, we’ve worked to develop a profile that brings forward the coffee’s intensity, fruit depth, and winey structure, without losing balance or drinkability.

Expect a syrupy, viscous body and layers of flavour that shift as the cup cools – from black cherry and blood orange, to lychee, chocolate, and red wine. The tropical fruit aroma is upfront, and the aftertaste lingers long after.
